[modified] Avocado Toastin'
Let's talk about avocado toast for a hot minute. It's heaven. Shall I have it for breakfast, lunch or dinner?! Mhm, it doesn't matter because it's always a winner. But, I'm sure you're thinking, geezy-beezy making avocado toast is easy-peasy. It does not deserve it's own blog post.
My friend, you are wrong.
You see, I was in Trader Joe's this evening and I had an avocado epiphany. I found some fab ingredients [one, two, three] and crafted up my own lil avo-toast creation. It's a no-brainer, but figured I'd share because the world cannot have enough avocado toastiness.
I was intrigued by the wholegrain crispbread. It's basically made from seeds [sunflower & sesame] and it's uber crunchy. The back packaging suggests eating with soup or cheese. But beezy thought it could be a sturdy foundation for some avo-lovin'. I agreed.
I also picked up some chunky guac. This version is considered 'less guilty' because it's made with greek yogurt, not 100% avocado, and has less fat + calories than traditional guac. Marketing. I never feel guilty when eating guac [#goodphats]. But I was curious to see how it tasted.
Lastly, the seasoning: everything but the bagel seasoning blend. I have this stuff stockpiled. It's amazing and so versatile. I normally use it with eggs, but it's a great pair to pretty much any veggie too if you're into roasting and toasting like me! When it comes to a topping for avoacado toast, phew it knocks it out of the park!
I don't have to tell you how to assemble it. You just do the damn thang :)
