Sunday Meal Prep: Veggie Roastin'

Vegetables don't have to be bland and boring. mmk?! Let's chat. 

I've found that the best way to keep things jazzy when it comes to veggie prep is the beezy roast n' toast. You know, spread a bunch of chopped veggies on a sheet pan, add a lil spray of coconut oil, and then a shimmy shake of your preferred seasoning/s. On Sundays, I typically take the time to roast a bunch of veggies at once and then save in the fridge to pair with a protein for a quick meal throughout the week. cool. 

Adding different seasonings is the best way to keep things interesting! I have 3 current faves, all of which can be snagged at Trader Joe's [shocker, right?!]. For each spice I've shown a different way I like to use it. These 'recipes' are SO easy, peasy. No culinary rocket science is preformed in beezy's kitchen... just quick, simple eats. Check 'em out! 

Let's start with the cinnamon. GIRL. I've been on a cinnamon kick for a hot minute over here. It's my ride or die spice, 100%. Bonnie and Clyde... pssh, more like Beezy and Cinnamon :) 

[Cinnamon + Sweet Pots, Cauliflower Florets, Cranberries]

Ingredients:

  • Peeled and chopped sweet potatoes
  • Dried cranberries
  • Cauliflower florets
  • Cinnamon 
  • Coconut Oil
  • Sea Salt

Instructions:

  1. Preheat oven to 400/450 degrees 
  2. Line a baking pan with parchment paper
  3. Add sweet pots + cauliflower florets + dried cranberries to the pan
  4. Spray with coconut oil + a shimmy shake of cinnamon + sea salt 
  5. Roast for 30 - 35 min (until golden brown) 

Now let's move on to the Everything But The Bagel Sesame seasoning [EBTBSS]. This stuff is bomb.com. Run, don't walk, to you TJs now and snag a bottle. It's awesome on all kinds of roasted veggies, but I also love using it with eggs and avocado toast. 

[EBTBS + Brussel Sprouts]

Ingredients:

  • Chopped brussel sprouts (quartered)
  • TJ's Everything But The Bagel Sesame Seasoning 
  • Coconut Oil
  • Sea Salt

Instructions:

  1. Preheat oven to 400/450 degrees 
  2. Line a baking pan with parchment paper
  3. Chop your brussel sprouts (I prefer to quarter them so they cook faster and get nice and crispy) and then add to the pan 
  4. Spray with coconut oil + EBTBSS + sea salt
  5. Roast for 35-40 min (until golden brown)

Last, but definitely not least, turmeric! This stuff is great and grand as well. It adds a slightly nutty zing to your veggies. But be careful - it's also a sneaky lil bugger and will stain your lightly colored dish towels or cookwear.

Also, as you can see, I used TJ's Healthy 8 Veggie Mix. It CANNOT get any easier than this, people. I love this stuff. It's a pre-chopped blend of red and green cabbages, carrots, broccoli, jicama, bell peppers, radishes and celery. 

[Turmeric +TJ Healthy 8 Veggie Mix]

Ingredients:

  • TJ's Healthy 8 Veggie Mix 
  • Turmeric  
  • Coconut Oil
  • Sea Salt + Ground Black Pepper 

Instructions:

  1. Preheat oven to 400/450 degrees 
  2. Line a baking pan with parchment paper
  3. Add TJ Heathy 8 mix
  4. Spray with coconut oil + turmeric + sea salt + ground black pepper 
  5. Roast for 20 - 25 min (until golden brown)

badda-bing. badda-boom. it's as simple as that! Enjoy :)
